One Pot Lemon Herb Chicken With Rice Pilaf
This quick and easy "One Pot Lemon Herb Chicken With Rice Pilaf" is cooked in chicken broth with herbs, broccoli, carrots and sweet onions. Not to mention, it has a delicious fresh lemon taste from the freshly cut lemon infused into the chicken and rice. Bonus point: everything is cooked in one pot in your rice cooker! It won’t take long to prepare, especially on a weeknight. In the end, you will open up a pot of flavorful, fluffy and perfectly cooked rice pilaf just in time for your dinner.
Ingredients A
- 1 Chicken Breast
- 1/4 Teaspoon Club House Lemon & Pepper Seasoning
- 1/8 Teaspoon Garlic Powder
- 1/8 Teaspoon Salt (optional)
- 1/8 Teaspoon Lemon Juice
- ⅛ Teaspoon Black Pepper
- 1 Tablespoon Softened Butter
Ingredients B
- 1 Cups Rice, uncooked (your choice)
- 2 Cups Chicken/Vegetable Broth/Water
- 1 Cup Chopped Broccoli
- 1/8 Cup Diced Carrots
- 1-2 Slices Fresh Lemon
- 1/2 Teaspoon Club House Lemon & Pepper Seasoning
- 3 Tablespoons Chopped Sweet Onions
- 1/2 Teaspoon Dried/Fresh Parsley Flakes (Optional)
- Club House Black Pepper (a dash or two)
- Salt to taste (optional)
Instructions
- Prepare Ingredients A - Prepare the chicken breast on a plate.
- Add all the ingredients listed in ingredients A in a bowl. Mix well.
- Spread them on both sides of the chicken breast. Set aside.
- Prepare ingredients B - Dice up carrots,chop up broccoli, slice up lemon, chop up sweet onions and set everything aside.
- Wash uncooked rice a few times and drain off the water.
- Add rice into the rice cooker pot.
- Pour in chicken broth/vegetable broth/water. Measure the liquid like you normally do when making your rice in a rice cooker.
- Add lemon pepper seasoning, black pepper, dried parsley flakes and stir to combine.
- Then add chopped sweet onions, diced carrots, chopped broccoli and give it a stir to combine with the rice.
- Finally place the chicken breast on top and place a few slices of freshly cut lemon on top.
- Put the lid back and turn the rice cooker on.
- Once the time is up, remove the chicken to a plate. Cut or slice chicken into bite sizes.
- Fluff the rice pilaf with a fork. Serve the rice pilaf with chicken on the side.

- You can use different types of rice when making this pilaf. I used whole grain brown today.
- Instead of chicken broth, you can replace it with vegetable broth, beef broth or water.
- Double up the rice and chicken for a big serving.
- This meal is great as meal prep as well as lunch bento to work/school.
- You can use different kinds of vegetables.
- You can make this on the stove or instant pot.
- Adjust salt according to your taste buds.
- Alternatively you can use cooking oil or olive oil instead of melted butter.
- You can use white onion/yellow onion/etc
- You can use any brand of lemon pepper seasoning. Above is our favorite so far.
