Tropical Salad Garlic Bruschetta

A lightly toasted garlic baguette topped with colorful, sweet, tangy, and delicious tropical fruits is the perfect finger food or appetizer for any summer get-together or BBQ. They are simple, tasty, refreshing and very easy to prepare. Impress your guests with this vibrant & colorful Tropical Salad Garlic Bruschetta at your next gathering.

Ingredients

  • 1 Loaf Garlic Baguette
  • 1/4 Cup Cubed/Diced Mango
  • 1/4 Cup Cubed/Diced Pineapple
  • 1-2 Stalks Cilantro/Parsley
  • 1/4 Cubed/Diced Mini Cucumber
  • 6 Cherry Tomatoes (cut into small chunks)
  • 1 Tablespoon Lemon Juice
  • Salt (to taste)
  • Black Pepper (to taste)

Instructions

  1. Slice baguette- With a knife, slice it on a diagonal or any way you want.
  2. Toast garlic baguette- Slightly toast the cut garlic baguette in an air fryer for 6-8 minutes at 120°.
  3. Cut pineapple into small chunks/cubes/dice. Alternatively, you can use canned pineapple instead of fresh.
  4. Cube or dice up mini cucumbers.
  5. Cut cherry tomatoes into half or into small chunks.
  6. Peel, cut and dice up mango. Set aside.
  7. Roughly chop up fresh cilantro or parsley.
  8. Place all the prepared tomatoes, cucumber, pineapple, mango and herb into a bowl.
  9. Add lemon juice, salt and black pepper to taste.
  10. Toss to mix and set aside.
  11. Take a piece of toasted garlic baguette and add a spoon or two of mixed salad on top of the toasted garlic baguette.
  12. Garnish with more cilantro or parsley and serve.

Tips & Notes

  1. Alternatively, you can use canned pineapple for fresh.
  2. If cherry tomatoes are not available, substitute them with tomatoes of your choice.
  3. You can use field cucumbers or English cucumbers if mini cucumbers are not available.
  4. If you are not a fan of cilantro, you can use parsley or another herb of your choice.
  5. You can use white pepper over black pepper.
  6. If garlic baguette is not available, you can use a regular baguette and spread garlic butter on the baguette.
  7. Alternatively, you can toast the baguette in the oven.
  8. The temperature of the air fryer above is your reference. Please adjust accordingly and toast the baguette to your liking.
