When it comes to homey, simple & nourishing soup, ABC Soup is the first one on our list. It is to believe that this soup is called “ABC” Soup simply because it stands for Vitamins A(Carrots), B(Potatoes) and C(Tomatoes). This easy and delicious soup is a perfect soup during winter time to warm you up.

Ingredients

  • 5-6 Chicken Drumsticks
  • 1.5 Cups Carrots, peeled & cut
  • 3 Medium Potatoes, peeled & cut
  • 1 Big Tomato, washed & quartered
  • 1/2 of a White/Sweet Onion, peeled & cut
  • 2 Sweet corn cobs, washed & cut in half or third (optional)
  • 6 Cups water (-/+ adjustable)
  • ⅛ - ¼ Teaspoon white peppercorns (-/+), roughly crushed
  • Salt to taste
These are all of the ingredients you will need to make ABC Soup.

Instructions

  1. Prepare all the ingredients for ABC soup above.
  2. Bring a pot of water to a boil and once you see some bubbles at the bottom of the pot, add all the drumsticks into the pot/saucepan.
  3. After 5-10 minutes, add onions, crushed peppercorns, tomatoes, carrots, potatoes & sweet corn cobs (optional, I did not use them as corn is not in season now in Canada)
  4. Boil the soup for 1 - 1.5 hours under medium low heat.
  5. Add salt to taste at the end.

Tips & Notes

  1. You can use 2 fresh bone-in split chicken breasts instead of chicken drumstick.
  2. Tomato skin can be peeled off if you dislike the skin.
  3. I used yellow potatoes in my recipe but you can use red or white if you prefer.
  4. Adjust peppercorns & salt according to your taste buds.
