Kewpie Mayo Cajun Chicken Salad

When you crave for some chicken salad, why not give our Kewpie Mayo Cajun Chicken Salad a try? This flavourful chicken salad is loaded with yellow, green and orange vegetables & is lightly drizzled with some delicious Kewpie mayo as dressing.

Ingredients A

  • 1-2 Skinless, Boneless Chicken Breasts
  • 1/4 Teaspoon Cajun Seasoning
  • 1/4 Teaspoon Butter (or less, just enough to rub/coat lightly on the chicken breast)

Ingredients B

  • 1/4 Cup Celery (Diced)
  • 1/4 Cup Romaine Lettuce (Chopped)
  • 1 Large/ 2 Medium Boiled Potatoes (Diced/cubed)
  • 1/8 Cup Carrot (Diced)
  • 1 Avocado (Peeled & Diced)
  • 2 Tablespoons / A few drizzles of Kewpie Mayo (+/- adjustable)
  • 1/4 Teaspoon Garlic Powder (or 1/4 Teaspoon Fresh Garlic Purée)
  • 1/8 Teaspoon Salt (+/- adjustable)
  • 1/4 Teaspoon Lemon Juice

Instructions

  1. Prepare Ingredients A. Spread some butter and Cajun seasoning on both sides of the chicken breast.
  2. Bake the chicken breast in an air fryer at 120*C for 20 minutes-25 minutes or until cooked through. Set aside.
  3. Prepare potatoes. Peel off potatoes skin and dice them up or cut into bite size pieces.
  4. Add potato chunks into a small pot filled up with cold water.
  5. Bring it to a boil at medium high heat and cook potato chunks until they are tender. This might take roughly 18-25 minutes or so. Once they are cooked, drain and set them aside.
  6. Prepare the rest of the vegetables. Peel off carrot skin. Clean and rinse romaine lettuce, carrots and celery.
  7. Dice or chop up romaine lettuce, carrots and celery. Set aside.
  8. Cut baked chicken into bite size. Set aside.
  9. Cut and peel off avocado skin. Cut into bite size pieces and set aside.
  10. In a large salad bowl, combine chopped romaine lettuce, diced celery, diced carrots, avocado chunks, diced potatoes and chicken chunks.
  11. Then add in or drizzle some Kewpie Mayo, garlic powder or fresh garlic purée & lemon juice. Season to taste with salt.
  12. Stir to combine and evenly coat in dressing.

Tips & Notes

  1. Alternatively you can use fresh garlic purée instead of garlic powder.
  2. If Kewpie Mayo is unavailable, you may substitute with regular mayonnaise of your choice.
  3. Japanese Kewpie Mayo can be found at most major grocery stores or online. This Japanese Kewpie Mayo is different than regular mayonnaise as they are made with just egg yolks, no sugar & salt and contains apple/rice vinegar.
  4. Please double or triple up the ingredients for big serving. The above serving I made for 2-3.
  5. You can cook chicken breast over the stove, bbq grill, etc.
  6. If cooking via an air fryer, please adjust the temperature accordingly. I didn’t preheat my air fryer.
