Quick & Simple All In One Pot Tomato Rice

This one pot tomato rice is packed with flavor, made with tomatoes, spices, almond milk, vegetables, and long grain rice. It is extremely nutritious, easy to prepare and a great match for any curry or side dish of your choice.

Ingredients

  • 2 Cups White Jasmine Rice/Long Grain White Rice
  • 1/2 Cup Almond Milk
  • 3 1/2 Cups Chicken/Vegetable Broth/Water (**remove 1/2 cup if you prefer firm/hard cooked rice over soft cooked rice)
  • 1 Tablespoon Tomato Paste
  • 1 Tablespoon Minced Fresh Garlic
  • 3 Tablespoons Chopped White Onion
  • 1 Stick Cinnamon
  • 5 Cardamom Pods
  • 2 Star Anise
  • 3 Cloves (optional)
  • 1/8 Cup Tomato Purée
  • 1 Teaspoon Salt
  • 3 Tablespoons Butter/Margarine
  • 2-3 Tablespoons Raisins (optional)

Instructions

  1. Heat up a pan or skillet at low heat and add in butter. Give it a stir and add in chopped onion, minced garlic, cinnamon stick, cardamom pods, star anise & cloves(optional).
  2. Stir fry for 2 minutes.
  3. Remove from the stove and set aside.
  4. Wash and rinse rice for 3-4 times, drain off the water and add the rice into the rice cooker pot.
  5. Add in almond milk & tomato paste. Stir to mix with a wooden spoon.
  6. Transfer the pre-cooked spices above into the rice cooker pot.
  7. Pour in blended tomato puree & salt.
  8. Pour in chicken/vegetable broth/water a little bit at a time (not all of them) into the rice cooker pot and mix to combine evenly with the rice. Do the index finger water level test like I did in the video. Dip your index finger down to the bottom of the rice cooker pot and pour enough liquid up to the first joint of your index finger.
  9. Add some raisins, cover the lid and click set to cook the rice in your rice cooker.
  10. When the rice is done, do not open the lid right away. Let it sit for 5 more minutes before you open up the lid.
  11. Fluff the rice with a fork and serve this rice with your favourite side dish or curry.

Tips & Notes

  1. The amount of liquid you add in your rice depends on how hard/firm or soft you prefer the rice to be.
  2. Alternatively you can use just water instead of broth.
  3. For the vegetarian version, use water or vegetable broth.
  4. If fresh garlic is not available, you can replace it with garlic powder.
  5. Other than white onion, you can use red or yellow onion.
  6. If you dislike almond milk, you may replace it with soy milk.
  7. You can make your own tomato paste & tomato puree from fresh tomatoes. Store bought is fine too.
  8. Butter can be replaced with margarine or lactose free butter. For the vegetarian version, replace butter with margarine.
  9. Alternatively you can cook this tomato rice on the stove or instant pot.
