For decorating

Instructions

  1. In a mixing bowl, add flour, cornstarch & salt. Mix these together and set them aside.
  2. In a separate bowl, add softened unsalted butter or margarine, granulated white sugar, light brown sugar,an egg and vanilla extract. Mix until combined with a spatula but don’t over mix it.
  3. Add some edible purple food colouring to the wet ingredient mixture.
  4. Stir & mix to combine.
  5. In batches, add the flour mixture to the wet ingredients mixture.
  6. Fold and mix with spatula then knead with hand until fully combined into a dough. If the dough is too dry, add in milk and knead to combine. If the dough is just right to the touch, just leave the milk aside.
  7. Chill the dough in the fridge for 1-2 hours or overnight in the fridge to make it easier to roll/shape. Chilling cookie dough prevents it from spreading too much during baking.
  8. Preheat the oven to 300*F
  9. Line the baking sheet with parchment paper.
  10. Take about 1.5 to 2 tablespoons of the cookie dough and roll them into a ball.
  11. Slightly press down the dough ball with your palm or the bottom of a glass to form a thick disc as shown in the video.
  12. Repeat the rolling/shaping process with the remaining dough.
  13. Use the back of a wooden spoon, gently press down and make a dent in the middle. Place it on a baking sheet.
  14. Make sure to space them out between each other to allow them to spread in the baking process.
  15. Bake the cookies at temperatures ranging from 270°F to 340°F in a preheated oven for 15 minutes, or until the sides turn a little golden brown. Freshly baked cookies are soft. They will harden as they cool down. So don’t touch it & let the cookies sit on the baking sheet for at least 5 minutes before transferring them to a cooling rack. **All ovens work differently, so please adjust the temperature & time accordingly. Add extra minutes if needed.
  16. Transfer the cookies to a cooling rack to cool completely.
  17. While waiting for the cookies to cool, go ahead and prepare/make the candy melt in the microwave.
  18. Microwave candy melt or wafers for 10 second intervals. Stir until smooth. Please note that each microwave works differently. So please adjust the melting time accordingly.
  19. Fill a piping bag with melted chocolate or melted candy and slightly snip off a small hole at the end with a pair of scissors.
  20. Make the eyes - Add a tiny dot of melted chocolate or candy melt at the back of the candy eyes and stick the eyes on the spider (truffle). Repeat the steps with the rest.
  21. Make the spider- Pipe/add a little bit of melted chocolate or melted candy in the middle of the dented cookies and place a chocolate truffle on the cookies. Once the melted chocolate cools down, the truffle will stick on the cookies. Continue this process with the rest of the cookies.
  22. Make the legs - Pipe 4 legs on each side of the cookies. Continue the process with the remaining cookies.
  23. Allow the decoration to dry before serving the "Itsy Bitsy Spider Truffle Cookies"!

Tips & Notes

  1. Due to the cold weather, the dough is a little dry. I ended up kneading the dough with 1/4 tablespoons of milk until it was combined (as shown in the video). So don't add milk yet until the dough comes together. That way, you can judge from there. If your dough is too sticky to handle, add a little flour to it a little at a time until the dough is workable.
  2. Please keep in mind that the temperature setting/time recommendations above are based on our oven. All ovens work differently. Please adjust the temperature setting of your oven accordingly.
  3. Alternatively, you can use margarine.
  4. If using salted butter, omit the salt in the recipe.
  5. If you can’t find light brown sugar, you can use granulated white sugar for all.
  6. You can use brown candy melt or melted chocolate chips/wafers/candy melt for decorating.
  7. You can get candy eyes at the baking supply store or online.
  8. The cookie dough can be prepared ahead of time.
  9. You can store the cookie dough in the freezer for up to 4 weeks in a ziploc bag.
