Rice Krispies Cookie Balls

Ingredients
- 1 Cup + 1/8 Cup Rice Krispies Cereal
- 2 Tablespoons Cornstarch
- 1/2 Cup All Purpose Flour
- 1/4 Cup Icing Sugar
- 1.5 Tablespoons Whole Milk Powder (or Fat Free Milk Powder)
- 1 Small Egg (lightly beaten)
- 1/3 Cup Salted Butter (soften)
- 2 Tablespoons Fresh Milk (add more if the dough is too dry to handle)
- 1 Teaspoon Vanilla Essence
Instructions
- Preheat oven to 300* F.
- Cream butter and icing sugar together in a bowl with spatula.
- Add fresh milk, vanilla essence & beaten egg into butter mixture. Mix to combine.
- Add corn starch & milk powder.
- Add all purpose flour and fold to mix the dough until well combined.
- Pour in Rice Krispies cereal & mix to combine.
- Lightly dust your palms with some flour and start to roll up 1 tablespoon of the dough into a small ball (or to your desired size).
- Place the cookie balls on a baking sheet.
- Bake at 260*F for 20 minutes or until the edges are slightly brown.
- Remove and cool them completely on a wire rack before storing them in an airtight container.

Tips & Notes
- Temperature of the oven may vary. Adjust your oven temperature accordingly.
- If the dough is too dry to handle, add a bit of flour but not too much. As long as they are pliable, that’s good enough.
- You can replace butter with margarine or lactose free butter.
- You can use unsalted butter if you prefer but you might need to add some salt into the dough (adjust the salt to your taste buds).
- Double or triple up the recipe ingredients for a big batch.
- We used whole milk powder for rich flavor.
