Slow cooked lotus root with peanuts chicken soup is another delicious, nutritious and easy to prepare soup. Lotus roots can do a lot to benefit our health because they are full of nutrients and minerals. Ingredients

  • 1 Large Fresh Lotus Root
  • 8 Chicken Drumsticks / 4 Chicken Legs / 2 Bone-In Chicken Breasts
  • 8 Cups Hot Water (-/+ adjustable)
  • 6-8 Red Dates
  • 1 Dried Squid/Cuttlefish (small piece )
  • 1/2 Cup Raw Peanuts
  • Salt (to taste)

Instructions

  1. Soak raw peanuts in water overnight in the fridge.
  2. Prepare chicken drumsticks or chicken breasts for the soup. Wash and do a quick one minute or two blanch in a pot of hot boiling water.
  3. Transfer the blanched chicken parts that you are using to a bowl or plate. Set aside.
  4. Remove the lotus root skin with a vegetable peeler.
  5. Wash and cut the lotus root into slices, set aside.
  6. Turn on the crockpot on Hi for 6 hours.
  7. Rinse dried squid/cuttlefish, set aside.
  8. Wash and rinse soaked raw peanuts a few times and drain off the water. Set aside.
  9. Add hot water into the crockpot.
  10. Add lotus root slices into the crockpot.
  11. Add chicken drumsticks/legs/chicken breasts into the crockpot.
  12. Add peanuts into the crockpot.
  13. Add dried squid or dried cuttlefish and red dates into the crockpot.
  14. Add more water if necessary or up to the water level as shown in the video.
  15. Let the soup slow cook for 5 to 5 1/2 hours or until everything in the pot is well cooked.
  16. Alternatively, you can cook this in an instant pot for 1 ½ hours on HI. However, **Please check your instant pot user manual guide setting for the cooking time for chicken soup & instant pot basic safety precautions cooking with your instant pot.
  17. After 4 hours add in salt and stir a few times. Cover the lid and continue to cook until the time is up.
  18. After 5 hours, taste test for saltiness and test the peanuts. Peanuts should be soft or tender and not crunchy. If that is the case, continue to cook for extra minutes until softened.
  19. Serve warm.

Tips & Notes

  1. Instead of 4 chicken legs, you can use 8 chicken drumsticks or 2 chicken breasts. Depending on the size, If the chicken drumstick is small, you may want to use 8. If large, then 6 should be enough to sweeten the soup. Since chicken legs are huge, I used only 4.
  2. The reason to blanch the chicken before cooking is to remove all the nasty things on the chicken before transferring them into the crockpot. As you can see at the end of my soup results, the soup is clear and clean.
  3. You can find fresh lotus root, red dates, raw peanuts and dried squid/cuttlefish in most Asian grocery stores.
