Homemade Salted Chicken/Duck Eggs
(How to make salted eggs with brining method)

You can easily make your own salted egg at home with just a few simple ingredients.The process is really not as complicated as you would think. These preserved eggs are soaked in salt brine for 25 - 30 days until they are ready for cooking or baking with salted duck/chicken egg. Hard boiled salted egg best eaten with congee/porridge as part of a condiment. Homemade is always better than store bought. Let’s make yours today!

Ingredients

  • 6 Chicken/Duck Eggs
  • 1 Cup Fine Kosher Salt (or your favourite type of salt)
  • 4-5 Cups Water (-/+ adjustable depends on the size of egg/jar)
  • 3 Tablespoons Chinese Cooking Wine
  • 2 Tablespoons Whiskey
  • 1 Glass Jar

Instructions

  1. Prepare a glass jar. Wash a glass jar in hot soapy water, rinse completely and dry it up with a kitchen towel or air dry it for a few hours before using.
  2. Wash the eggs and gently pat dry with a kitchen towel. Set aside.
  3. Bring a pot of water & salt to a boil at medium high heat.
  4. Stir salt until it dissolves . It’s okay if the salt does not dissolve completely.
  5. Remove from the stove and allow to cool completely before using.
  6. Gentle fill the glass jar with eggs and pour in salt solution. Make sure the eggs are all fully submerged.
  7. Add Chinese Cooking Wine & Whiskey into the salt solution.
  8. Try to weigh down with a small ceramic saucer or crumpled up a piece of parchment paper to push the eggs down in the jar.
  9. Secure the lid & mark down the date.
  10. Let them cure for at least 25 days up to 28 days(for chicken eggs) and 30 days (for duck eggs) in a cool dark spot.
  11. Taste test. After 25-27 days, remove one from the jar, crack it and test/check the yolk. The salted egg is ready when the yolk is slightly firm to the touch and bright yellow/orange in colour (see picture). Alternatively you can cook one and taste test for saltiness. If the salted egg is not salty enough to your liking, let the rest of the eggs (for both chicken/duck eggs) cure for a few more days.

Tips & Notes

  1. You can make salted egg with fresh chicken or duck egg.
  2. Cured/Salted eggs can be stored in the fridge.
  3. Normally people use salted egg yolk to make mooncake, bamboo leaf rice dumpling, stir fry salted egg yolk chicken,etc. Some prefer hard boiled salted chicken/duck eggs and eat them with porridge or rice.
  4. You can use kosher salt, sea salt, table salt, pickling salt, etc. This won't affect the result when you use any one of these.
  5. Double up the ingredients for big batches.
  6. You can use 5 tablespoons of Chinese cooking wine and omit the whiskey if you don't have whiskey.
