Osmanthus Scrambled Eggs

This traditional egg dish, known as "Osmanthus Scrambled Eggs", is a simple, tasty and easy to make dish that features eggs and crab meat as the main ingredients, with carrots and scallions added for color. It is believed that Osmanthus scrambled eggs got their name from their resemblance to the tiny yellow blossoms of the Osmanthus plant. In this version, we used crab sticks, which are also known as surimi. This dish can be made vegetarian by omitting the crab sticks, crab meat or surimi with shiitake mushroom. This great dish can be enjoyed on its own or wrapped in lettuce as an appetizer or starter.

Ingredients:

  • 3 Large Eggs
  • 3-4 Crab Sticks/Surimi (Softened Shiitake Mushroom-vegetarian version)
  • 1/4-1/2 Cup Soaked/Softened Glass Noodles
  • 1/4 Cup Julienned Carrot
  • 1/2-1 Tablespoon Cooking Oil (your choice of oil)
  • Salt (to taste)
  • 1/8-1/4 Teaspoon White Pepper Powder
  • 1/4 Teaspoon Chicken Bouillon Powder (Vegetable Bouillon Powder-vegetarian version)
  • 1/4 Teaspoon Shaoxing Cooking Wine/Dry Sherry (omit if can’t take alcohol)
  • 1/4 Teaspoon Sesame Oil
  • 1/8 -1/4 Teaspoon Fish Sauce (omit if dislike & vegetarian version)
  • Some Scallions,Julienned (optional)
  • Lettuce (garnishing,optional )

Instructions:

  1. Soak glass noodles in room temperature water until they loosen up, and drain off the water. With a pair of kitchen scissors, snip or cut them into half as shown and set aside.
  2. Cut crab sticks or surimi into strips and set aside. For the vegetarian version, soak shiitake mushrooms until softened and cut into strips or anyway you like.
  3. Prepare scallions and carrots as described above, then set aside.
  4. Crack three eggs into a bowl and lightly beat them with a whisk.
  5. Heat up cooking oil in a pan at medium heat.
  6. When the pan is ready, gently pour in the beaten egg and don’t stir it yet. Let it cook for 1-2 minutes on medium low heat.
  7. Add julienned carrots, crab stick strips (or shiitake mushrooms), chicken powder (or vegetable powder), sesame oil and white pepper.
  8. Now stir to mix everything up and break the scrambled egg as shown in the video.
  9. Turn up the heat to medium and keep stirring for a minute or two. Add in cooking wine & fish sauce.
  10. Continue to stir fry the egg mixture for a few seconds.
  11. Add in the softened glass noodles and stir to combine.
  12. Add salt to taste, scallions and stir for a second or two before turning off the heat.
  13. Transfer them to a plate lined with lettuce (optional).
  14. Serve warm.
